Moroccan Salads

It is pretty common to find a dish called “Moroccan salad” on the menus of Moroccans restaurants.

The name might be the same in every place, but what they will serve you can be very different!

Moroccan saladsThere are a lot of different types of “Moroccan salads”. You can ask what type they have before ordering, but to be honest, you can just risk it too: I’ve never had a bad one.

I decided to share my two favorite recipes with you: a tomato one and a carrot one.
They are both easy to make, healthy and very flavourful. Enjoy!

Khizou – marinated carrot salad:
For 4 people

  • 4 peeled carrots chopped in julienne strips
  • 4 tsp of lemon juice
  • 1/5 cup of chopped parsley
  • 1/5 cup of chopped cilantro
  • 4 cloves of garlic
  • a pinch of cumin
  • 4 teaspoons of olive oil
  • Salt to tast

Mix all the ingredients together and store in the fridge for at least an hour before serving.
It is a great salad that you can prepare the day before and bring to a picnic.
You can even use it to garnish a sandwich.

Moroccan tomato and pepper salad:
For 4 people

  • 4 big tomatoes peeled and diced (you can also press the tomatoes to get rid of the excess of liquid)
  • 1 medium red onion chopped in little pieces
  • 3 medium green peppers grilled, peeled and thinly sliced
  • 1 small hot pepper grilled, peeled and thinly sliced
  • a bunch of chopped parsley
  • a pinch of cumin
  • 4 teaspoons of olive oil
  • 4 teaspoons of white vinager
  • salt and pepper to taste

Mix all the ingredients together and serve immediately.
Little tip: here is a way to grill a pepper like in Morocco.
